Things You’ll Need
1 cup canola or vegetable oil
2 egg yolks
2 tablespoons rice vinegar
1/2 to 1 teaspoon salt (optional)
1/2 teaspoon dashi powder
1/2 teaspoon Dijon mustard
In a bowl, combine rice vinegar, salt, dashi powder and Dijon mustard. Whisk well.
Add the egg yolks and whisk.
Add the oil in a thin, steady stream while whisking continuously.
To make sure the ingredients emulsify, be sure to add the oil while whisking continuously.
Continue whisking the mixture until the ingredients emulsify and thicken. Taste it and add more salt or dashi powder if you’d like.
